Your new favourite soup

Although I love spending hours in the kitchen at special occasions, my everyday food is always very simple. That’s why I love having recipes that aren’t really recipes. It’s more like a few fixed ingredients to make a good base and get things going, and then just let it evolve from there.

So, what I want to show you today is a yummy liquid thing that you can make into a soup, use in a stew or maybe as a gravy. Most days I roast whatever veggies I have in the oven, maybe throw in some beans and pour this base over it. I imagine pasta would work fine as well.

This is what you need: – 1/2 fresh onion – 1 can of coconut milk – 3 tbs tomato puree – Juice from 1/2 a lime – Oil, salt, pepper & spices

This is what you do: – Let oil and fine cut onion simmer in a pot until it turns golden brown – Add tomato puree and spices – Add everything else and let cook for a few minutes.

My favourite spices for this is garlic, paprika, chili, cayenne pepper, curry and cumin. All at once! But again, use your imagination. Maybe basil, coriander or ginger would be good? Pretend like you’re a star in the kitchen and use that little teaspoon of yours to taste test it over and over until you’re satisfied.

This is the kind of dish I just can’t stop eating once I’ve started. Haha, it’s ridiculous. I hope you like it as well!
