Kale salad dressing

Somewhere along the road of eating a plant based diet I stumbled upon kale and thought to myself; “how am I supposed to get this paper-like green leaf down my throat?” I did what I do best, asked my beloved friend mr. Google for advice. He told me the secret lies in the beautiful act of massaging. I’d never given my food a massage before, but I had some experience pinching my mothers feet when forced to. I tried it on my kale, and now that it’s been a few years I’ve developed a technique.

What I learned early on, is that the dressing you use will act as a massage oil. Certain ingredients will help you break down the cell-wall of the kale, and do some of the job for you. Cause I’m not going to lie, it’s a little bit of a finger workout!

All you need for my favourite dressing is:

– Juice from 1 lemon
– 1 tbsp tahini
– 1 tsp agave nectar
– 1 tsp olive oil

Stir it together using a fork, and drown your kale in it. Use your hands to give the green leafs a massage, and after about 3-4 minutes it should be soft and moist. This dressing tastes amazing. You can have the salad as a side to your main dish, or just add some fruit and other vegetables to make it a whole meal itself. So nourishing and filling, you won’t believe!
